Being a veteran CCFC fan, it was suggested (despite my disproving the theory that wisdom comes with age) that I would be able to offer the board's growing army of posters on the board some sage advice.
So, sage derby is a cheese best avoided - it looks like it's been in the fridge for at least six months, with a taste to match.
IMHO, you can't beat a good caerphilly, although I'm also fond of wensleydale, although it can have the unfortunate side effect of making you talk like Peter Sallis.
Many decades ago when I lived for a while up north (I was young, foolish and living dangerously), I used to frequent the cheese stall on Stockport market - they had a totally fabulous range of cheeses, which they were happy to let you sample. I'd love to know if it's still going.

I love any cheese with blue stuff in it ... however, I will be looking for new varieties with some red stuff in them

You can get a Wensleydale with cranberries in. Vincent Tan says it tastes like "success".

Roast butternut squash and sage risotto is very nice. That's the only sage advice I can offer in this thread.

By one of those 'stranger-than-fiction' quirks of fate, the shirt I am wearing at the moment is sage-coloured. Sage looks a lot better on a shirt than it does on a cheese.....I may wear it to the next home game......
