As the title says, film adaptations that are as faithful to and as enjoyable as the book.

I'll start with some Stephen King. The Green Mile and The Shawshank Redemption to the novella of Rita Hayworth and Shawshank Redemption in Different Seasons (a fantastic collection of novellas if you have never read them)

Not a film but Dexter series 1 does the book justice IMO. After that it goes down its own path but still brilliant nonetheless. Series 4 of Dexter is probably one of the best I've seen on TV.

On Stephen King still, I hear 'The Mist' was pretty good, although admittedly not seeing it yet.

I loved The Shining though I understand King hated it.

Also, I personally enjoyed the hunger games that was true to the book. The next two films are going to get pretty dark.

The film of Nick Hornby's High Fidelity was surprisingly good.

The Lord of the Rings trilogy was a brilliant effort by Peter Jackson.

As was The Hobbit, which is both highly enjoyable on paper and the screen (so far).

Fight Club is actually quite different from the novel but takes the humour, tone and characters and really expands on it to the point where I would say it is actually better than the book.

I Am Legend on the other hand is just one of the worst adaptations ever.

Fight Club is a brilliant book and worth reading even if you've seen the film. In fact most Chuck Palahniuk books are very good. Cormac McCarthy's The Road was adapted well. Although that was mainly due to the performance by Viggo Mortensen.
